Menu Board

I have been wanting to make a Menu board for a while.
I even had the right frame to start with, but just haven't had the time.

It is still a little unfinished since I want to buy some vinyl letting to put the words 'Menu' and each day of the week.

Here is the before...

And here it is completed with my menu from this week.


I love how it brings a little color to our dining room and also puts the list out there so that my family knows what to expect.

Busy Day Parmesan Pork Chops

If you like Pork, then these are for you. They are easy, fast and delicious. I found them in a Cooking Light Magazine a couple of years ago.

Here is the full recipe:

Busy Day Pork Chops
By:Tamber McAllister

Ingredients:


¼ c. fat-free milk

¼ c. grated parmesan cheese

¼ c. seasoned bread crumbs

¼ t. salt

¼ t. garlic powder

1/8 t. pepper

4 boneless pork loin chops (4 oz ea)


Directions:

Place milk in a shallow bowl

In another bowl combine cheese, bread crumbs, salt, garlic powder and pepper. Dip pork chops in milk, then coat with crumb mix.

Place on a baking sheet and coat w/ cooking spray. Bake at 375 for 9-11 min on each side.

Sunday's Sermon

It seems like I am surrounded by people who have lost their loved ones recently. I am so thankful for my religion, my beliefs and my knowledge of living with our families for eternity.

I remember when I was a child, I slept over at a friends house. I could have only been 6 or 7 and yet we stayed up all night talking about how I believed that I could live with my family forever. I remember how amazed she was at that concept after recently loosing an extended family member. Now, this isn't a story of conversion, in fact, I don't even remember her full name nor do I know where she is now, but I do know that I planted one of the most important seeds of the gospel.

Watermelon Love.

Watermelon is like Gold in our house.

I look forward all year to watermelon. I wish there were a way to freeze the refreshing summer taste of a perfectly ripe watermelon.

But there is not (or maybe you all are hiding something from me...please don't hesitate if you have any life altering suggestions of ways that I can include more watermelon in my life)

Call me a 'green' housewife, but this tip has changed my life
(scratch that...this tip has changed my summer life).

So, How do you cut a watermelon?

This is how I do it...

Start by cutting your watermelon in Half, then into thin wedges.


Lay the slice flat and slice vertically.


Then slice Horizontally.


Then separate the watermelon from the peel as seen below.

And there you have it... A perfectly sliced Watermelon...don't mind the piece that is missing :)

Semi-Homemade Clam Chowder

Some day's I really don't feel like cooking, but I am a mom and I can't starve my family. I have a couple of recipes on file that are quick and easy. This is one of them.

It is a Semi-homemade Clam Chowder.

Here are the cast of characters....

I start by boiling the water as according to the directions on the back of the Bear Creek Creamy Potato Soup. While that is warming to a boil, I chop my potatoes into somewhat small pieces. I like to leave the skin on...you don't have to.

Then I drain my Clams. I don't like to bit into my clam chowder and get a big bite of chewiness, so I go ahead and let my cute daughter chop those clams a little smaller.

Once the water comes to a boil, wisk in the amount of mix that you need. Then add the clams and the potatoes so that they can soften while you simmer the soup for 15 min. Yeah, 15 minutes. The whole process takes about 20 min. Not too Shabby. And this is what you end up with.


You don't have to use bread bowls if you dont have them. If you would like an easy recipe, use Rhodes Rolls. That is what I did for these ones in the picture. I thawed the bread the quick way (cause when do I ever plan ahead), took it out of the oven from raising, placed it on a floured surface. Then I cut the Bread Loaf in Half for the big ones and into fourths for my children, Shaped them into round circles and placed them on a sprayed cookie sheet. Make sure you give them each their own space so that they don't touch each other. Brush the rolls with a beaten egg. Cover with plastic wrap and let rise until double (30-40 min). Cook at 350 for 20 minutes.

When they are done, let them cool a little while, then cut the top off. You don't want to pull too much of the bread cause then it will collapse. Leave about 1/4 in - 1/2 in of bread around the edges.

Teacher Gifts

Can you really thank the teacher's of your children enough?

I don't feel like I can.

I definitely don't have the patience of a teacher.

I really wanted to make something for Emma's 4 teachers.

And publicly, I would like to say Thank You to Mrs. Minda, Mrs. Candice, Ms. Holly and Mrs. Terry. Not only have they been so loving of my little girl, they have prepared her to go to kindergarten next year....Scary!
