Moist Pumpkin Bread


This is probably my most favorite fall recipe. I have been using it for a couple of years now. When I make it I will usually mix one in a bowl, and the dry ingredients two more times in a plastic bag so that the next time I make it, it is quick and easy.


Ingredients:

1 cup all-purpose flour
1/2 cup sugar
2 teaspoons baking powder
1 1/2 teaspoons cinnamon
1/4 teaspoon ground ginger
1/2 teaspoon nutmeg
1/2 teaspoon salt
4 tablespoons butter, cut into pieces
1 heaping cup pumpkin puree
1/2 cup evaporated milk
1 egg
1 1/2 teaspoons vanilla
1/2 cup Walnuts or Raisins (optional!)
2 tablespoons sugar
1 teaspoon cinnamon
1/4 teaspoon nutmeg

Directions:

Preheat oven to 400 degrees. Generously grease 12 muffin tins.

Sift flour, sugar, baking powder, cinnamon, ginger, nutmeg, and salt. Cut in butter with two knives or a pastry blender until all incorporated. In a separate bowl, mix together pumpkin, evaporated milk, egg, and vanilla. Pour pumpkin mixture into the flour mixture. Add raisins. Fold gently until mixture is just combined. Pour into greased muffin pan—batter hardly ever fills all twelve unless you keep it down to 1/2 full. Sprinkle generous amounts of cinnamon-sugar over the top of each unbaked muffin.
Bake for 25 minutes. Allow to cool in pan for 15 minutes, then remove and allow to cool.

Shadow Box...

I have two baby blessing outfits that need framing so that they can be remembered.

They bring special memories of my small children and I want them to be able to keep them when they are older.

I have been trying to find just the right shadow boxes.

I think I finally found it, the problem. I will have to duplicate it on my own.



I think it is so classy, and very doable (with my dad's help of coarse).

I can just picture the two blessing outfits hanging in my kids room.

Room Mom

I am working on a project for my little Emma's Class Halloween Party.

I don't know what I was thinking when I volunteered to add another thing to my plate?!

Here is the Halloween Craft that I am making for 25 kids.


I can't remember where I got the idea..somewhere on the world of the internet, but I love it. I am going to alter it a little.

Something Fresh

I love this Fresh Bedroom.

What do you think? I love her ideas for this room. You could even change out the accent color every once in a while for a change.
